Executive Chef John McGrew’s culinary story began at home, shaped by the aromas and traditions of his mother’s Italian cooking. From an early age, the kitchen was more than a place to eat. It was where culture, creativity, and connection came together.
Originally pursuing a path in academia, John left the English Department at McNeese State University to follow his passion for food full time. He enrolled in the culinary program at SOWELA Technical Community College, where he refined his technique and committed fully to the craft.
Early in his career, John served as sous chef at The Bekery prior to its relocation, gaining invaluable experience in both savory and baking disciplines. His time there strengthened his foundation in pastry and precision, skills that continue to influence his approach to menu development.
He later stepped into the role of Executive Chef at the Pioneer Club, where he led kitchen operations and elevated the dining experience through thoughtful execution and strong leadership.
In May 2023, John joined Crying Eagle Brewing Company at the University location as Executive Chef. Since then, he has played a key role in shaping the culinary identity of the brand. In addition to leading the University kitchen, he contributed to the development of the menu at Crying Eagle Lakefront, helping establish a cohesive yet distinctive dining experience across both properties.
Chef McGrew’s style blends comfort, technique, and approachability. Rooted in tradition yet driven by innovation, his food reflects both his Italian upbringing and his dedication to Louisiana hospitality.
