Chef Charles Jackson is a talented, award-winning, and dedicated culinary professional at L’Auberge Casino Resort Lake Charles, overseeing multiple outlets including Banquet events, Modern Pantry, and Drago’s seafood restaurant. A proud graduate of Johnson & Wales University, Chef Charles has been part of the resort’s culinary team since 2020, bringing a passion for fresh, innovative cuisine to the heart of Lake Charles.
With prior experience at The Shreveport Sam’s Town Casino and Seminole Hard Rock Hollywood Casino & Resort, Chef Charles has cultivated a diverse culinary background. Originally from Miami, he began exploring gourmet cooking in high school, and his early experience as a Navy Mess Specialist honed his skills in satisfying large and discerning palates—his Chicken Marsala becoming a favorite among servicemen and officers alike.
Chef Charles’s culinary style fuses Cajun-Creole traditions with modern techniques, incorporating fresh tomatoes, herbs, spices, and sauces inspired by his travels across the United States. His creations often feature signature dishes like Seafood Ceviche, tropical sofrito, adobo salsa, and tostones crumbles—delighting guests with bold, authentic flavors.
Beyond his professional achievements, Chef Charles is a humble family man who values quality time with his wife and children. His family’s favorite dishes include roasted spaghetti squash with chicken Parmesan and homemade marinara, reflecting his commitment to simple, flavorful home-cooked meals.
