Chef Leonair Dorsey is a New Orleans native. She is an alum of the Delgado Community College Culinary School with a concentration in Pastry Arts. With over 15 years of culinary experience she has spent 6 of them at Gracious Bakery and Cafe. For the last two years, she has been the Head Pastry Chef and production manager, working with a team to produce hundreds of pastries every week and thousands of king cakes every Mardi Gras season. She has taught classes with the Bread Bakers Guild and the New Orleans Culinary & Hospitality Institute. She is currently involved in the implementation of a new HACCP program at Gracious Bakery. All of this while being mom to two beautiful girls. Chef Leonair has a love for all things pastry as well as sharing her knowledge and teaching others.
